Monaci delle Terre Nere wedding

The black earth of the name is Etna’s. The estate sits on the volcano’s eastern flank above Zafferana Etnea, at the height where the vines stop and the chestnut woods begin, and everything on its twenty-four hectares grows in lava soil: nerello vines, olives, citrus, persimmon, kiwi, a herb garden and the vegetable gardens that feed the kitchen.

It has been farmed organically for two decades, which in Sicily was an eccentricity when it started and is now the reason people come.

The buildings are older than the farming. A pink eighteenth-century manor at the top of the terraces, stone barns and presses around it, dry-stone walls of volcanic rock, and among them a handful of modern glass-walled rooms that look straight at the mountain. It belongs to Relais & Châteaux, and the Michelin Guide gives it one Key.

Etna is in view from nearly every part of it, and on a clear night so is the sea.

A wedding here happens outdoors on terraces cut into the slope, and the estate’s own table tells you what each one holds.

The largest space on the estate: 300 seated on the terraces around the pool, with the mountain behind and the coast below. It is where a wedding of any real size puts its dinner.

The garden made for this, 230 seated and 250 standing, sheltered by the terraces and close enough to the kitchen that the service works without a convoy of golf carts.

The olive grove, 150 seated among the trees, which is the prettiest dinner on the estate and the one we push for a wedding under that number. The civil ceremony is held here too.

Two hundred seated above the main house, with Etna on one side and the Ionian on the other. It takes the aperitivo when the dinner is elsewhere, or the whole wedding when the guest list is moderate.

The back-up room, 150 seated, which matters more here than on the coast: this is a mountain, the cloud comes down, and a wedding at 800 metres needs a roof it can reach in ten minutes.

Convivium for 40 and the smaller rooms for a dozen, which is where the welcome dinner and the family lunch belong rather than in a hall built for 200.

Twenty-four rooms, which is the number a buyout prices. They run from deluxe rooms in the old buildings to estate suites, pool suites, and villas of two, three, four and five bedrooms set apart in the vineyard, each with its own pool.

The newest of them are glass boxes under timber roofs, built low into the terraces so that the volcano fills the window from the bed. The oldest are stone rooms in the manor with lava walls a metre thick.

A wedding that does not take the whole estate holds between six and sixteen rooms instead, on a minimum of two nights, and the rest of the guest list stays in Taormina, 35 minutes north, or in Catania, half an hour down the mountain.

The estate is at Zafferana Etnea, in the province of Catania, on the eastern slope of Etna inside the national park.

Catania Fontanarossa is 40 minutes down the volcano and holds Delta’s non-stop from New York, mid-April into October, the only transatlantic route into southern Italy. Palermo is two and a half hours the other way.

There is a helipad on the estate, and on this mountain it is used: the transfer from Catania by air is minutes, and guests who arrive by yacht at Riposto come up in a quarter of an hour.

Taormina is 35 minutes, Catania 31, and the Rifugio Sapienza, where the cable car climbs towards the craters, is 29 minutes up the road. The wine road of Etna, with the nerello growers on it, starts at the gate.

The estate is taken whole by the day: just under €50,000 a day from May to October, for 24 rooms and two days at least, with the organic breakfast, the VAT and the service inside that figure. The shoulder months cost less.

The wedding itself. The banquet is the estate’s own, from €180 a head with the aperitivo, four courses, the Etna wine and the cake; the ceremony area, the open bar, the flowers and any marquee are quoted on top; and the design, the music, the photography and the transfers come from outside.

The buyout also requires one food-and-drink function a day for every guest, which is the part couples miss: the estate is not selling rooms, it is selling a full house eating together.

There is no published curfew, which is not the same as no curfew. The estate sets no hour in writing, so the comune of Zafferana Etnea decides it and the estate agrees it with us for the date. We settle that before a couple signs, because a mountain commune of scattered houses can be generous and we would rather have it in writing than hope.

Plan for the mountain, not the island. This is 800 metres up a volcano. Evenings are cooler than the coast by several degrees, cloud can come down in an hour, and the back-up room is a real part of the plan rather than an insurance policy nobody reads.

Buy the estate out if the wedding is over 80. Short of a buyout the hotel keeps other guests, and the terraces are shared. We recommend the buyout from the first conversation, because the price of the rooms is the same either way and the privacy is not.

Use the kitchen. The food is grown on the estate and cooked by people who know it, which is rare enough in Sicily that it should shape the menu. We design the wedding around the harvest rather than importing a fashion.

The helicopter is not a flourish here. Catania to the estate is a few minutes by air against 40 by road, and for a guest list arriving on one afternoon it can be cheaper than the coaches. We price both and let the couple choose.

Do not schedule the last night for Etna. The volcano puts on a show whenever it likes, and ash closes Catania airport for a day or two several times a year. We keep a day of slack before the flights home and tell guests to book flexible tickets.

Monaci delle Terre Nere gives a wedding a working organic farm on a volcano: 24 rooms, a kitchen that grows what it cooks, terraces that seat 300 and a civil ceremony the comune will register on the estate. Very little has to be brought in, and what does can come up the mountain in an afternoon.

What it cannot do is make the mountain behave. The weather at this altitude turns faster than on any coast in Sicily, the back-up room takes 150 rather than 300, and a wedding of 200 therefore needs a structure held from the day the date is. Add a guest list split between the estate, Taormina and Catania, and an airport that closes when the volcano decides, and the work is the contingency rather than the ceremony.
