The estate sits at Palazzetto in the Val di Merse, in the hills west of Siena, at the end of a road that does not go anywhere else.

The villa at the centre of it was built in the thirteenth century as a resting place for pilgrims walking to Rome. It was restored over a decade by Claus and Jeanette Thottrup, and what surrounds it now is 300 acres of organically cultivated land with a farm, a dairy, culinary gardens and thirteen acres of formal garden.

The estate holds three Michelin Keys. Its restaurant, Saporium, holds a Michelin star and a Michelin Green Star, which is the guide’s mark for sustainability and is rarer than the star itself.

The villa

The gardens

Thirteen acres of them, laid out in rooms of their own, with the lake, the rose walks and the long cypress allée. Most ceremonies happen outside and this is where.

Saporium

The Michelin-starred restaurant inside the villa, built on the estate’s own farm and gardens. Sole use includes both restaurants, though the food served in them is quoted separately.

Sull'Albero

A trattoria and bar built around a spreading oak, with a terrace over the Valle Serena and the newer vineyards. This is where the welcome dinner and the recovery lunch go.

Food and drink

San Galgano, and Why It Matters

A few kilometres from the estate stands the roofless Cistercian abbey of San Galgano, and on the hill above it the round church of Montesiepi, which houses a sword driven into a stone.

Both will host a wedding ceremony, and we arrange them. That is the thing to understand about choosing this corner of Tuscany over the Chianti: you are not only buying an estate, you are buying a ceremony inside a thirteenth-century abbey with no roof and grass on the floor, and then a seven-minute drive back to dinner.

We would plan a Borgo Santo Pietro wedding around that abbey rather than around the gardens, because the gardens exist at a dozen Tuscan estates and San Galgano does not exist anywhere else.

Music, and the One in the Morning

At Borgo Santo Pietro the end of the night is bought rather than granted.

The brochure says that staffing is included in the price up until one in the morning, and that a party continuing past it is charged €700 an hour to keep the team on. That is the price of the people, not a limit on the noise, and it is the single most misread line in the pack: directories have quoted one o’clock as this estate’s curfew for years by mistaking a staffing charge for a restriction.

The estate covers 300 private acres in the Val di Merse with no neighbour within earshot, so the question here was never really about sound.

We agree the finishing hour with the estate, set it in the contract and cost the extra hours into the budget from the beginning, so that nobody is deciding at half past midnight whether the night is worth another seven hundred euros.

Accommodation at Borgo Santo Pietro

Eight are in the villa itself: two Deluxe rooms, three Junior Suites, three Suites and a Grand Suite. The rest sit in the gardens, as two Garden Junior Suites sharing a Mediterranean courtyard, seven Garden Suites each with a private garden, and four Pool Suites each with a pool of its own.

Every room is styled individually and the furnishing is largely antique. One double, Sir Vincent, has twin beds and the rest are queen or king.

Forty-four beds against a hundred seats is the gap to plan for. Check-in is from four and check-out by eleven.

The estate is at Palazzetto in the comune of Chiusdino, in the Val di Merse south-west of Siena.

Siena is 50 minutes by road and Grosseto an hour and four, which places this between the Chianti and the Maremma rather than in either.

Getting guests there

Florence Peretola is an hour and 46 minutes and is the airport to use. Pisa is two hours and 19, Perugia two and a quarter, and Rome Fiumicino three and a half.

None of those are short, and the transfer is part of what a guest is being asked to do. We book cars rather than leaving it to hire vehicles, because the last stretch is a white road and arriving in the dark unaided is a poor beginning.

The minimum is three nights because the estate is an hour and three-quarters from an airport and nobody comes for one evening. That means a welcome dinner under the oak at Sull’Albero, the wedding itself, and a recovery lunch, and the food and drink minimum is sized for all three.
